Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Stir in the garlic, green onions and the jalapeno. Cook for about 5 minutes, stirring occasionally.
Add the vegetable mix, allspice and brown sugar into the mashed sweet potatoes. Season to taste with salt and pepper. Mix together well.
Form the sweet potato mixture into 8 balls and slightly flatten to form cakes.
Pour the remaining vegetable oil into the same skillet, bring to medium-high heat. Place a few of the sweet potato cakes into the skillet and cook until golden brown, flip and repeat until golden brown.

2 sweet potatoes, peeled, cut into small cubes
1/4 cup vegetable oil, plus 1 tablespoon
2 cloves garlic, minced
3 green onions, with tops, thinly sliced
1 jalapeno, seeded, finely chopped
1/4 teaspoon allspice
1 teaspoon brown sugar
Salt, to taste
