Porterhouse Steak with Jalapeño Butter

Serves 2
Ingredients:
1 stick unsalted butter, softened |
2 cloves garlic, minced |
1 fresh jalapeño chile, seeded and finely chopped |
1 porterhouse steak, room temperature |
Coarse salt |
Freshly ground black pepper |
Directions:
- Prepare grill for medium-high heat.
- Combine butter, garlic and jalapeño in a small bowl; set aside.
- Season both sides of porterhouse steak with salt and black pepper. Set steak over the hottest part of the grill. Cover grill and cook steak for 3 minutes. Turn steak over and cook, covered, 3 minutes more. Move steak to cooler side of grill. Cover grill and cook steak for 7 minutes. Turn steak over and grill, covered, 7 minutes more or until desired degree of doneness is reached.
- Remove steak from grill and let rest 10 minutes.
- Serve with jalapeño butter.
