Lettuce Cups With Crispy Shrimp and Sweet Mango

Serves 4

A fun appetizer to make that’s easy to make and even easier to eat. Try them out at your next party, they’ll be all the buzz.

Ingredients:

1 head butter lettuce, (leaves separated)
6 oz sugar snap peas, (thinly sliced)
2 tablespoons lemon juice
1 lb shrimp, (cooked, peeled, and deveined)
1/2 teaspoon pepper
1 mango, (cut into 1/2-inch pieces)
1/2 cup sour cream
1/2 teaspoon kosher salt
2 stalks celery, (cut into 1/4-inch pieces)
1/2 cup basil, (fresh, torn)

Directions:

  1. Whisk salt, lemon juice, pepper and sour cream together in a large bowl.
  2. Add in celery, mango, basil, snap peas and shrimp to bowl. Toss together, evenly coating the shrimp.
  3. Scoop into lettuce leaves and enjoy!
