Mango Halibut Ceviche

Serves 6
Fresh, full of flavor and fantastic!
Ingredients:
2 mangos, (peeled, seeded and diced) |
1/4 cup lemon juice |
1/2 cup Vidalia onion, (finely chopped) |
1/2 bunch cilantro, (chopped) |
1/3 cup lime juice |
1 green bell pepper, (seeded and finely chopped) |
1 1/2 lb halibut, (boneless, skinless, cubed into small pieces) |
1/4 cup tequila |
1 teaspoon salt |
1/2 red onion, (finely chopped) |
1/4 cup parsley, (chopped) |
3 jalapeno peppers, (seeded and minced) |
Directions:
- In a ceramic bowl, combine 1 mango, lemon juice, lime juice, halibut, tequila and jalapeno peppers. Mix together and refrigerate for 2 hours.
- Remove from refrigerator, add Vidalia onion, green bell pepper and red onion. Mix together and refrigerate additional 30 minutes.
- Remove from the refrigerator, add second mango, parsley and cilantro. Season with salt and enjoy!
