Mango Halibut Ceviche

Serves 6

Fresh, full of flavor and fantastic!

Ingredients:

2 mangos, (peeled, seeded and diced)
1/4 cup lemon juice
1/2 cup Vidalia onion, (finely chopped)
1/2 bunch cilantro, (chopped)
1/3 cup lime juice
1 green bell pepper, (seeded and finely chopped)
1 1/2 lb halibut, (boneless, skinless, cubed into small pieces)
1/4 cup tequila
1 teaspoon salt
1/2 red onion, (finely chopped)
1/4 cup parsley, (chopped)
3 jalapeno peppers, (seeded and minced)

Directions:

  1. In a ceramic bowl, combine 1 mango, lemon juice, lime juice, halibut, tequila and jalapeno peppers. Mix together and refrigerate for 2 hours.
  2. Remove from refrigerator, add Vidalia onion, green bell pepper and red onion. Mix together and refrigerate additional 30 minutes.
  3. Remove from the refrigerator, add second mango, parsley and cilantro. Season with salt and enjoy!
