Guacamole and Grilled Corn Dip

Serves 12
An incredible combination of flavors and textures.
Ingredients:
1 1/4 teaspoon barbecue rub |
1 tablespoon olive oil |
1 red onion, cut into thick slices |
2 cloves garlic, minced |
2 ears corn, husks removed |
1/4 cup lime juice |
3 avocados, halved |
Directions:
- Preheat grill to 400° F.
- With oil, brush onion slices, exposed avocado, and corn. Sprinkle tablespoon barbecue rub over the three ingredients. Grill the corn for 12 minutes, grill avocado and onion at same time for 3 and 4 minutes respectively, turning onion once to grill opposite side for 4 minutes. Cover with lid when grilling. Let food cool for 15 minutes.
- In a bowl, mix together garlic, remaining rub and lime juice, stirring until mixed evenly.
- Cut corn kernels off of cob, add to garlic mix. Cut avocado and onion, add to garlic mixing bowl and mash until chunky.
