Pineapple Peach Lime Agua Fresca

Serves 4
Sweet, slightly tart and wholly refreshing.
Ingredients:
For Simple Syrup: |
4 tablespoons water |
4 tablespoons sugar |
For Agua Fresca: |
2 cups water |
3 ripe peaches, peeled and cubed |
1 cup fresh pineapple chunks |
6 tablespoons lime juice |
1 cup frozen sliced peach |
Lime slices, for serving |
Fresh mint, for serving |
Directions:
- Pour the water and sugar into a saucepan. Bring to medium heat. Stir until the fully sugar dissolves, then let simmer for 1 minute. Remove the saucepan from the heat and let cool.
- Pour the water into a blender then add the peaches and pineapple. Pulse until smooth. Pour through a fine mesh sieve into a pitcher, use a spoon to press out the last of the liquid. Pour the remaining 1 cup of water, the lime juice and the simple syrup into the pitcher. Stir together until thoroughly incorporated.
- Place the pitcher into the refrigerator to chill.
- When ready to serve, add crushed ice to four tall glasses. Distribute the frozen peaches amongst the glasses and pour the Agua fresca over the ice and peaches. Garnish with a few lime slices and fresh mint.
