Banana Bread Brownies

Serves 12

Two sweet confections in one awesome treat.

Ingredients:

2 eggs
1 cup sour cream
1 stick unsalted butter
1 1/2 cups sugar
3 bananas, mashed
2 teaspoons vanilla extract
2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup chopped walnuts
For the Frosting
1 stick unsalted butter
3 cups powdered sugar
3 tablespoons milk
1 1/2 teaspoons vanilla extract

Directions:

  1. Preheat the oven to 375° F. Grease a large baking pan with baking spray.
  2. Crack the eggs into a mixing bowl. Add the sour cream, butter and sugar to the bowl. Use a hand mixer to beat until well combined. Then, add the mashed bananas and vanilla extract. Mix until well combined.
  3. Add the flour, baking soda, and salt to the bowl. Mix to combine. Add the chopped walnuts and mix together.
  4. Pour the banana batter into the baking pan. Place into the oven to bake for 20-30 minutes. Remove from the oven and allow to rest.
  5. In a saucepan, melt the butter over medium heat, allowing to brown. Turn the heat off and add 1 cup powdered sugar. Stir until combined and then add another cup, repeat one more time. Then add the milk and vanilla extract. Stir until combined.
  6. Pour the frosting over the brownies in the pan. Spread with a spatula.
  7. Once fully cooled, cut into 12 squares and enjoy!
