Easy Top Round Roast Beef

Roast beef does not get any easier!

Ingredients:

3 lb beef top round roast
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 tablespoon kosher salt
2 teaspoons cracked black pepper

Directions:

  1. Preheat oven to 450° F. Place a rack inside a roasting pan.
  2. Place roast in a large bowl. Drizzle olive oil over the roast and rub all over to coat evenly. Sprinkle minced garlic, kosher salt and cracked black pepper over the roast and rub all over to coat.
  3. Place the beef roast on the rack in the roasting pan. Place pan into the oven and roast uncovered for 15 minutes.
  4. Reduce the oven temperature to 325° F. Roast for an additional 45-60 minutes, until internal temperature of roast reaches 135° F.
  5. Remove the roasting pan from the oven and tent aluminum foil over the top of the roast. Allow to rest for 10 minutes before serving.
