Bacon and Potato Egg Scramble

Serves 4

Easy to make and incredibly delicious.

Ingredients:

4 strips bacon, cooked and chopped
2 russet potatoes, peeled and diced
1/4 cup sliced green onions
2 tablespoons milk
1/3 cup butter
6 eggs
1/4 teaspoon ground black pepper

Directions:

  1. Melt butter in a large skillet over medium heat. Once hot, add potatoes and onions. Cook for 10 minutes, stirring often.
  2. In a bowl, beat together eggs, milk and pepper. Mix in bacon. Pour mixture over potatoes. Cook, without stirring, until mixture begins to set around the edges and on the bottom. Using a large spoon or spatula, lift and fold partially cooked egg mixture so uncooked portion flows underneath. Continue cooking for 4-5 minutes.
