Herb Roasted Chicken

Serves 6
A simple chicken recipe with huge flavor.
Ingredients:
3 lb bone-in chicken |
2 tablespoons butter |
1/3 cup finely chopped onion |
3 tablespoons chopped fresh parsley |
1 1/2 teaspoons finely chopped fresh rosemary |
1 1/2 tablespoons chopped fresh sage leaves |
Salt, to taste |
Pepper, to taste |
Directions:
- Preheat oven to 400° F.
- Melt 1 tablespoon butter in a small saucepan set over medium heat. Add onion; cook and stir until tender.
- Reduce heat to low then stir in parsley, rosemary and sage; remove from heat.
- Melt remaining 1 tablespoon butter; brush over surface of chicken. Rub herb mixture over chicken and sprinkle salt and ground black pepper over chicken.
- Arrange chicken on a baking pan, loosely cover chicken with aluminum foil and place in oven to roast for 75 minutes. Remove from oven and let chicken stand for 5 minutes before serving.
