Gluten-Free Instant Cinnamon Oatmeal

Serves 6

While not oatmeal in the traditional sense, this dish has similar traits to regular oatmeal.

Ingredients:

For preparation:
3/4 cup coconut, (shredded, unsweetened)
3/4 cup chia seeds
3/4 cup golden flax meal
For eating:
Sweetener, (for taste)
1/2 cup water, (hot)
2 tablespoons coconut milk, (unsweetened)

Directions:

  1. Combine shredded coconut, chia seeds, cinnamon, and golden flax meal in an airtight container. Shake ingredients together.
  2. When ready to eat, scoop out 1/2 cup of mixture from container. Pour oatmeal into bowl, pour in 1/2 of hot water, let sit 3-5 minutes.
  3. Add coconut milk and sweetener before eating. Stir ingredients together and enjoy!
