Leftover Turkey Soup

Serves 10 |
Use your Thanksgiving leftovers to create one delicious dish!
|1 tablespoon poultry seasoning|
|Turkey leftovers, (meat, bones, carcass)|
|Garlic salt, (to taste)|
|16 oz green peas|
|2 carrots, (peeled, sliced)|
|Ground black pepper, (to taste)|
|2 celery stalks, (chopped)|
|2 cups white rice, (uncooked)|
|1 1/2 cups stuffing|
|2 1/2 quarts chicken broth|
|1 onion, (peeled, diced)|
- Place carrots, poultry seasoning, turkey leftovers, chicken broth, onion, and stuffing in a large pot. (Add water if needed) Bring contents to a boil on medium-high heat. Reduce heat and simmer for 1 hours. Remove turkey carcass and bones. Place any meat back in pot.
- Add pepper and garlic salt, to taste. Pour in white rice and turn heat up. Bring pot to a boil. After boiling, reduce to simmer and cook for 15 minutes.
- Stir in peas, continue to simmer for 10 minutes. Add more salt and pepper if needed.
