Black Bean and Chickpea Salad with Lime Vinaigrette

Ingredients:
For the Lime Vinaigrette:
1 clove garlic, minced
1/2 cup extra virgin olive oil
1/3 cup fresh lime juice
1 tablespoon honey
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 teaspoon cumin
For the Salad:
2 cans black beans, drained and rinsed, 15 oz. each
1 can chickpeas, drained and rinsed, 15 oz.
1 jalapeno, seeded and finely chopped
1/2 cup finely chopped green pepper
1/4 cup finely chopped fresh cilantro
1/4 cup finely chopped sweet onion
Coarse salt, for garnish
1 avocado
Directions:
Pour the garlic, olive oil, lime juice, honey, salt, pepper and cumin in a small bowl. Stir together until well blended.
Add the black beans, chickpeas, jalapeno, green pepper, cilantro and sweet onion into a large bowl. Season with a few dashes of coarse salt, stir together.
Pour the lime vinaigrette over top and place in the refrigerator to chill for 1 hour.
