Gingerbread Banana Bread

Serves 12 slices
Subtly sweet with the right amount of spice.
Ingredients:
Cinnamon Sugar Mix: |
1/2 cup sugar |
1 teaspoon ground cinnamon |
For the Bread: |
1 cup packed dark brown sugar |
1/2 cup unsalted butter |
3 bananas, mashed |
2 eggs |
1/4 cup molasses |
1/4 cup sour cream |
1 teaspoon vanilla extract |
1 1/2 cups flour |
2 teaspoons ground ginger |
1 teaspoon ground cinnamon |
1 teaspoon baking soda |
1/2 teaspoon ground all spice |
1/2 teaspoon ground nutmeg |
1/2 teaspoon salt |
For the Glaze: |
1 cup powdered sugar |
5 teaspoons milk |
Directions:
- Preheat oven to 350 degrees F. Grease a large loaf pan with nonstick baking spray. Sprinkle the cinnamon sugar inside the entire pan.
- Beat together the brown sugar and butter in a mixing bowl, until creamy. Add the banana, eggs, molasses, sour cream, and vanilla extract, beat until mixed. Stir in the flour, ground ginger, ground cinnamon, baking soda, ground all spice, ground nutmeg, and salt. Pour the mixture into the loaf pan.
- Place into the oven and bake 65-70 minutes. Remove and let the bread cool in pan for 10 minutes. Remove the bread from the pan and let fully cool on a wire rack.
- Stir together the powdered sugar and milk in a small bowl. Pour the glaze over the gingerbread banana bread. Cut into slices and enjoy!
