Cilantro Lime Tuna Salad Sandwich

A delicious departure from the classic recipe.

Ingredients:

4 cans tuna, in water
2 stalks celery, finely diced
1 jalapeno, stemmed, seeded, minced
1 bunch green onions, finely diced
3/4 cup mayonnaise
1 tablespoon hot sauce
1/2 cup cilantro, chopped
2 tablespoons lime juice
2 teaspoons lime zest
1/2 teaspoon ground black pepper
8 brioche buns
8 slices pepper jack cheese
1 ripe tomato, sliced
2 hass avocados, peeled and mashed

Directions:

  1. Open and drain the cans of tuna. Transfer the tuna to a mixing bowl.
  2. Add the chopped celery, jalapeno, and green onions to the tuna. Stir to combine. Set aside.
  3. Place the mayonnaise in a small bowl. Add the hot sauce, cilantro, lime juice, lime zest, and black pepper. Whisk until thoroughly mixed.
  4. Pour the mayonnaise mixture over the tuna mixture. Stir together until well incorporated.
  5. Preheat the oven to 350° F. Line a baking sheet with parchment paper.
  6. Split the brioche buns and place them on a baking sheet. Lay a slice of pepper jack cheese on each of the bottom buns. Place the baking sheet in the oven and bake for 5 minutes.
  7. Remove the buns from the oven. Spoon a generous amount of tuna salad on to each bottom bun. Top the tuna salad with a tomato slice.
  8. Spread the mashed avocado across the top buns. Place the top bun on the tomato to complete the sandwich. Enjoy!
