Whipped Feta Dip with Roasted Balsamic Strawberries

Serves 6
A sweet, savory, and creamy appetizer.
Ingredients:
1/2 cup plain Greek yogurt |
8 oz feta cheese |
2 tablespoons olive oil |
Black pepper, to taste |
2 lb strawberries |
2 tablespoons balsamic vinegar |
2 teaspoons honey |
Toasted bread, for serving |
Directions:
- Combine the Greek yogurt, feta cheese, olive oil, and black pepper in a food processor. Pulse until smooth. Place into the refrigerator to chill for 45 minutes.
- Preheat oven to 350° F. Line a large baking sheet with parchment paper.
- Hull the strawberries, then cut into thick slices. Place the strawberries in a large bowl. Whisk together the balsamic vinegar and honey in a mixing bowl. Drizzle the balsamic-honey mixture over the strawberries and toss to coat.
- Pour the bowl of strawberries on the baking sheet and space them out. Place into the oven to roast for 35 minutes.
- Remove from the oven and let cool for 10 minutes.
- Transfer the whipped feta to one side of a large bowl. Put the roasted strawberries on the other side of the bowl. Spoon the whipped feta and strawberries across toasted bread. Enjoy!
