Tuscan Salmon with Parmesan Cream Sauce

Serves 4
Take your taste buds on a Italian retreat.
Ingredients:
4 salmon fillets |
Salt, to taste |
Ground black pepper, to taste |
1 tablespoon olive oil |
1 tablespoon butter |
4 sun-dried tomatoes packed in oil, sliced |
2 cloves garlic, minced |
1/2 cup dry white wine |
1 cup heavy cream |
1/2 cup Parmesan cheese |
1 cup fresh spinach |
Directions:
- Season the salmon with salt and pepper.
- Stir together the olive oil and butter in a frying pan. Bring to medium-high heat. Once hot, place the salmon in the pan and sear for 6 minutes. Transfer the salmon to a plate.
- Reduce the heat to low and add the sun-dried tomatoes and garlic. Saute for 30 seconds. Pour the white wine into the pan and let simmer for about 5 minutes, until the liquid is reduced to half.
- Pour the heavy cream into the pan and add the Parmesan. Stir until the cheese is melted and incorporated into the sauce. Then add the spinach followed by the salmon. Let simmer for 5 minutes.
- Transfer the salmon, spinach, and tomatoes to serving plates. Pour the sauce over top and enjoy!
