Ingredients:
2 tablespoons butter
1 sweet onion, chopped
1 red bell pepper, chopped
1 box black beans and rice mixture, 7 oz.
2 3/4 cups vegetable stock
3 green onions, chopped
Caribbean jerk seasoning, to taste
Directions:
Bring 2-quart saucepan to medium-high heat. Add the butter and then add the chopped sweet onion and red bell pepper. Saute for about 5 minutes, until the onions are translucent.
Add the black beans and rice mix into the saucepan. Pour in the vegetable stock and stir well. Place the lid on top and bring to a boil on high heat. Once boiling, reduce the heat to medium-low. Keep the lid on and let simmer for 25 minutes.
Remove the saucepan from the heat and let rest for 5 minutes with the lid still on.
Remove the lid, add the green onions and season with Caribbean jerk seasoning. Stir together until well combined.
