Breakfast Beef Sausage Burritos





Serves 8
The tastiest morning meal.
Ingredients:
2 tablespoons olive oil |
2 cups frozen tater tots |
6 breakfast beef sausage patties |
8 eggs, lightly beaten |
1/3 cup milk |
1 can refried beans, 16 oz. |
2 Roma tomatoes, diced |
1 cup shredded Monterey Jack cheese |
1 cup shredded cheddar cheese |
8 flour tortillas, 8-inch |
Kosher salt, to taste |
Ground black pepper, to taste |
Directions:
- Preheat oven to 400° F. Grease a baking sheet with cooking spray.
- Arrange tater tots on the baking sheet and bake according to package directions.
- Pour olive oil into a large skillet. Bring skillet to medium heat. Once hot, add sausage patties, cook for 3-5 minutes, break apart with a spatula.
- Add eggs to the skillet and begin to whisk. Add half and half and continue to whisk, cooking for 3-5 minutes. Season with salt and pepper and set aside.
- Use a spoon to spread refried beans down the center. Arrange tater tots and the sausage-egg mix on top of beans. Spoon tomatoes, and sprinkle both cheeses over top. Fold in ends of tortillas and wrap up.
- Line a baking sheet with aluminum foil.
- Place burritos seam side down on the baking sheet. Bake for 12-15 minutes.
