White Cheddar Macaroni and Cheese

A delicious step up from box mac and cheese.

Ingredients:

6 slices white bread, crust removed, torn into pieces
8 tablespoons unsalted butter
5 1/2 cups whole milk
1/2 cup flour
2 teaspoons kosher salt
2 teaspoons ground black pepper
1/4 teaspoon cayenne pepper
4 1/2 cups grated sharp white cheddar cheese
2 cups grated Gruyere cheese
1 lb elbow macaroni

Directions:

  1. Heat the oven to 375° F. Grease a 3-quart casserole dish with cooking spray.
  2. Place bread pieces in a mixing bowl. In a small saucepan melt 2 tablespoons butter over medium heat. Pour butter into the mixing bowl and coat bread pieces. Set aside.
  3. Pour milk into the same sauce pan warm over medium heat.
  4. Melt the remaining butter in a separate saucepan over medium-high heat. Once the butter begins to bubble, add flour. Stir together well.
  5. Pour a small amount of warm milk into flour-butter mixture, whisk until mixed. Continue to pour in warm milk and whisking.
  6. Remove the pan from the heat. Stir in salt, black pepper, cayenne pepper, 3 cups white cheddar and 1 1/2 cups Gruyere. Set aside.
  7. Fill a large saucepan with water. Bring to a boil and add macaroni. Cook until al dente. Transfer macaroni to a colander and rinse macaroni under cold running water.
  8. Add macaroni to the cheese sauce and stir well.
  9. Pour the macaroni into the casserole dish. Sprinkle remaining white cheddar and Gruyere over top. Sprinkle breadcrumbs over the cheese. Place in the oven and bake for 30 minutes, until browned on top.
