Ham and Potato Soup

Serves 8 |
|5 lbs. russet potatoes, peeled and diced|
|2 cups ham, diced small|
|1/2 stick butter|
|1 cup half and half|
|1/2 cup sour cream|
|Salt, to taste|
|Fresh ground pepper, to taste|
- Place potatoes in a large pot; add just enough water to cover. Place lid on pot and bring to a boil.
- Once boiling, uncover and reduce heat to medium-high. Cook potatoes for 15 to 20 minutes.
- Reduce heat to low; add ham and butter then season with salt and pepper. Add sour cream and half and half. Keep soup warm until ready to serve.
