Ginger Cranberry Sauce

The tastiest way to spice up Thansgiving dinner.
|1 red onion, finely diced|
|1 tablespoon minced ginger|
|6 tablespoons orange zest|
|1 lb fresh cranberries|
|1 cup fresh orange juice|
|2 tablespoons brown sugar|
|Salt, to taste|
|Black pepper, to taste|
|Canola oil, for cooking|
- Coat a saucepan with canola oil, bring to medium heat. Once hot, saute the red onions, ginger and orange zest for 3 minutes.
- Add the cranberries, orange juice, brown sugar, salt and pepper. Stir to combine.
- Simmer for 30 minutes until very soft.
- Transfer to a serving bowl and enjoy.
