Autumn Pear Salad

Serves 4

The perfect salad for Fall parties.

Ingredients:

1 Bartlett pear
3 cups mixed greens
1/3 cup pomegranate arils
2 tablespoons pomegranate juice
1/2 tablespoon honey
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon olive oil
Ground black pepper, to taste

Directions:

  1. Halve and core the pear, then cut each half in slices.
  2. Place mixed greens in a salad bowl. Add pear slices and pomegranate arils and toss together.
  3. Combine pomegranate juice, honey, Dijon mustard, lemon juice, olive oil and pepper in a saucepan. Bring to a boil on high heat. Once boiling, reduce heat to low and simmer. Stirring frequently for about 2 minutes.
  4. Pour the dressing over the salad, gently toss and enjoy.
