Autumn Pear Salad

Serves 4
The perfect salad for Fall parties.
Ingredients:
1 Bartlett pear |
3 cups mixed greens |
1/3 cup pomegranate arils |
2 tablespoons pomegranate juice |
1/2 tablespoon honey |
1 teaspoon Dijon mustard |
1 tablespoon lemon juice |
1 tablespoon olive oil |
Ground black pepper, to taste |
Directions:
- Halve and core the pear, then cut each half in slices.
- Place mixed greens in a salad bowl. Add pear slices and pomegranate arils and toss together.
- Combine pomegranate juice, honey, Dijon mustard, lemon juice, olive oil and pepper in a saucepan. Bring to a boil on high heat. Once boiling, reduce heat to low and simmer. Stirring frequently for about 2 minutes.
- Pour the dressing over the salad, gently toss and enjoy.
