Tropical Banana Nut Bread

Serves 6
Banana bread with a tropical twist.
Ingredients:
1/2 cup sugar |
3/4 cup oil |
4 eggs |
2 1/2 cups flour |
1/2 teaspoon baking powder |
2 teaspoons baking soda |
1 teaspoon salt |
1 package instant vanilla pudding |
3 cups mashed ripe banana |
1 cup macadamia nuts |
3/4 cup shredded coconut |
Directions:
- Preheat oven to 350° F. Grease 3 loaf pans with cooking spray.
- Combine oil, sugar and eggs in a mixing bowl.
- Sift in flour, baking powder, baking soda, salt and pudding. Blend in bananas. Gently fold in macadamia nuts and shredded coconut.
- Pour batter into loaf pans. Place in oven and bake for 1 hour.
