Spiced Pot Roast

Serves 8
Succulet, rich and superbly tender.
Ingredients:
3 lb boneless beef rump roast |
1/3 cup flour |
2 tablespoons vegetable oil |
1 1/2 cups beef broth |
1/2 cup raisins |
1/2 cup chutney |
1/2 cup chopped onion |
1 1/2 teaspoons curry powder |
1/2 teaspoon ground ginger |
1/2 teaspoon garlic powder |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
- Preheat oven to 325° F.
- In a bowl, combine flour, salt and pepper; rub over entire roast.
- Pour vegetable oil into a Dutch oven, bring to medium heat. Brown roast on all sides.
- In a separate bowl, combine broth, raisins, chutney, onion and spices. Pour mixture over roast.
- Cover and bake in oven for 3 hours.
