Oven Roasted Corn on the Cob with Chipotle Herb Butter

Serves 8
Corn on the cob never tasted so good.
Ingredients:
1 cup unsalted butter |
3 tablespoons chipotle peppers in adobo sauce |
1 1/2 tablespoons chopped shallot |
1 1/2 tablespoons chopped marjoram |
3 tablespoons lime zest |
1 1/2 teaspoons coarse salt |
1 1/2 teaspoons ground black pepper |
8 ears corn, husked, washed |
Directions:
- Preheat oven to 350° F. Place a tray on bottom rack to catch drippings.
- Cut a large sheet of aluminum foil into 8 pieces, to wrap each ear of corn. Lightly coat each piece of foil with cooking spray.
- Place butter, peppers, shallot, marjoram, lime zest, salt, and black pepper in a small bowl. Combine ingredients together.
- Rub each ear of corn with 3 tablespoons of the mixture then tightly wrap with foil.
- Arrange wrapped corn directly on oven rack, seam sides up, above tray. Bake for 30 minutes.
- Remove corn from oven and allow corn to cool for 10 minutes. Carefully remove foil then serve.
