Romaine Salad with Toasted Pine Nuts & Oranges

Serves 6


Ingredients:

1/2 cup thinly sliced red onion
1/4 cup thinly sliced fresh basil
2 navel oranges, peeled, halved and sliced
1 package romaine lettuce, torn
3 tablespoons red wine vinegar
1 tablespoon canola oil
1 tablespoon honey
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1 clove garlic, peeled and minced
1/4 cup pine nuts, toasted

Directions:

  1. Place onion, basil, sliced oranges and romaine in a large bowl.
  2. In a small bowl, combine vinegar, oil, honey, pepper, salt and garlic, whisking until blended. Drizzle over lettuce mixture; toss to coat.
  3. Sprinkle salad with pine nuts and serve immediately.
