Loaded Jalapeno Corn Fritter

Serves 2
Everything you love about jalapeno poppers and corn fritters in one dish.
Ingredients:
2 jalapeno peppers, (diced) |
2 tablespoons chopped cilantro |
1/2 cup corn flour, (more may be needed to help hold patties together) |
2 slices bacon, (cooked and crumbled) |
2 cups corn kernels |
1/2 cup grated Cheddar cheese |
2 green onions, (sliced) |
2 tablespoons cooking oil |
1 teaspoon ground coriander |
1/4 cup cream cheese |
1 egg |
1 lime, (zest and juice only) |
1 teaspoon smoked paprika |
Directions:
- Pour cooking oil in saute pan. Turn to medium heat.
- Combine jalapeno peppers, cilantro, corn flour, bacon, corn kernels, Cheddar cheese, green onions, coriander, cream cheese, egg, lime juice and zest and paprika in a mixing bowl. Mix together very well.
- Form into two patties with hands.
- Once pan is hot, place patties in and cook 2-4 minutes per side. (Should be golden brown)
