Baked Potato Skins with Pizza Toppings

Serves 16
The perfect weekend snack.
Ingredients:
1/2 cup Pepperoni, diced |
1/2 stick butter, melted |
6 oz shredded cheese, your preference |
8 Russet potatoes |
Kosher salt, to taste |
Canola oil, to grease pan |
14 oz Pizza sauce |
Additional pizza toppings, optional |
Directions:
- Preheat oven to 400° F.
- Clean and scrub each potato. Rub with canola oil, season with light sprinkle of salt. Place in oven, bake 30-45 minutes, skin should become crisp.
- Remove from oven, let cool long enough to handle with bare hands. Cut each potato in half, use spoon to scoop out center of potatoes. (Leave some around edges and a bit in the middle.) Brush the inside of the potatoes with melted butter. Place on baking sheet, bake additional 5-7 minutes. Remove from oven and let cool.
- Put a spoonful of pizza sauce in each potato, top with cheese, place on diced pepperoni and other toppings. Place in oven, bake for 2-3 minutes.
- Remove from oven and serve soon afterward.
