Healthier Macaroni and Cheese

Serves 8
A baked alternative to the traditional stovetop dinner classic.
Ingredients:
1 cup Gouda cheese, (smoked and shredded) |
3 tablespoons butter |
1 lb pasta, (uncooked, elbow) |
1/2 cup Cheddar cheese, (sharp, shredded) |
3 oz cream cheese, (softened) |
8 oz ham, (smoked, chopped) |
1/4 cup flour |
1 1/4 cups corn flake cereal, (crushed) |
3 cups milk |
12 oz evaporated milk |
1/2 teaspoon salt |
1/4 teaspoon ground red pepper |
Vegetable cooking spray |
Directions:
- Preheat oven to 350° F.
- Cook pasta until tender. Drain water and set aside.
- Melt 2 tablespoon butter in Dutch oven on medium heat. Whisk in flour and cook for 1 minute. Add evaporated milk and milk, cook 8-10 minutes. Whisk ingredients constantly.
- Add salt, Gouda, cream cheese, half the red pepper and Cheddar, whisk until smooth. After cooking, remove from heat and then add pasta and ham.
- Coat a large baking dish with cooking spray, then pour in the Dutch oven ingredients. Add remaining butter and red pepper, cereal to the baking dish. Stir all ingredients together.
- Bake for 30 minutes. Let cool at least 5 minutes before serving.
