Healthy Potato Salad

Serves 12
This healthy alternative to traditional potato salad.
Ingredients:
1/8 teaspoon ground black pepper |
3/4 teaspoon salt |
1/4 cup rice vinegar |
5 cups cubed red potato |
2 tablespoons canola oil |
1/4 cup chopped green onions |
1 cup chopped cucumber |
3/4 cup chopped green bell pepper |
2 1/4 ounces olives |
3/4 cup sliced cherry tomato |
1/2 cup chopped red bell pepper |
Directions:
- Combine vinegar, 1/4 teaspoon salt, pepper and oil in bowl. Stir until evenly blended. Set aside.
- In a saucepan, combine remaining salt and potato, add water until 2 inches above potato. Boil contents and then reduce heat to simmer, cook for 8 minutes. Drain pan.
- In separate bowl, add oil mix to potatoes and toss until evenly coated. Set aside for 15 minutes. Add onion, olives, tomato, cucumber, and bell peppers to potatoes. Toss until evenly coated. Refrigerate until chilled. Ready to serve!
