Easy Chopped Salmon Salad

Serves 4

Enjoy this heart healthy salad!

Ingredients:

2 cups lettuce
2 teaspoons garlic, minced
1/2 red onion, chopped
2 tablespoons cilantro, chopped
1 lb. fresh salmon filet
2 tablespoons lemon juice, fresh squeezed
1/2 Roma tomato, chopped
1 teaspoon salt, more for taste
1 teaspoon pepper, more for taste

Directions:

  1. Preheat oven to 350° F.
  2. Add salt and pepper to salmon filet. Bake for 10 minutes on pan, cover top with foil.
  3. Remove salmon from oven and chill until cold. Chop salmon into small pieces then set aside.
  4. Mix together, lettuce, garlic, onion, cilantro, lemon juice, and tomato. Add salmon, gently toss and enjoy!
