Mushroom Fajitas





Serves 4
Healthy, hearty, and bursting with Tex-Mex flavor.
Ingredients:
4 portobello mushrooms, sliced thick |
1 yellow onion, thinly sliced |
1 green bell pepper, sliced into strips |
1 red bell pepper, sliced into strips |
1 yellow bell pepper, sliced into strips |
3 tablespoons olive oil |
3 tablespoons fresh lime juice |
2 tablespoons fajitas seasoning |
1/4 teaspoon cayenne pepper |
8 flour tortillas, warmed |
Directions:
- Preheat the oven to 450°F. Line a large baking sheet with aluminum foil.
- Add the mushrooms, onion, and bell peppers to a mixing bowl. Drizzle the olive oil and lime juice over the vegetables. Sprinkle the fajita seasoning and cayenne pepper. Toss to coat.
- Pour the mushrooms, onion, and bell peppers on the baking sheet.
- Place in the oven to bake for 15-18 minutes, until the veggies are tender. Remove from oven.
- Serve the warmed tortillas with the mushroom fajitas. Enjoy!
