Jalapeno Peach Chicken Skewers

Great as a weekend dinner or a party appetizer.

Ingredients:

15 wooden skewers, soaked in water for 30 minutes
2 lb boneless, skinless chicken breasts, cut into cubes
2 tablespoons extra virgin olive oil
1/2 teaspoon ground black pepper
1/2 teaspoon chili powder
1 teaspoon kosher salt
4 yellow peaches, quartered, then halved
3 jalapeno peppers, seeded, cut into chunks
For the Peach Glaze:
1 teaspoon soy sauce
1/5 cup peach preserves
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 teaspoon apple cider vinegar
1 tablespoon extra-virgin olive oil
1/8 teaspoon ground black pepper
1/8 teaspoon red pepper flakes
1/2 teaspoon kosher salt

Directions:

  1. Place the chicken in a large mixing bowl. Add the olive oil, black pepper, chili powder, and salt. Toss until well coated.
  2. Thread each skewer with peaches, chicken, jalapenos.
  3. Bring the grill to medium-high heat. Arrange the skewers on the grill. Cook for 8-10 minutes per side.
  4. Stir together the soy sauce, peach preserves, Dijon mustard, garlic, apple cider vinegar, olive oil, black pepper, red pepper flakes and salt in a medium saucepan. Bring to medium-low heat. Cook and stir until warmed through.
  5. Brush the chicken skewers with a generous amount of peach glaze. Enjoy!
