Lime Crinkle Cookies

Serves 24

Sweet and tangy with a crispy exterior.

Ingredients:

2 cups flour
1 teaspoon baking powder
2/3 teaspoon salt
1 stick unsalted butter
1 cup sugar
1 tablespoon lime zest
2 eggs
4 tablespoons lime juice
Green food coloring
4 tablespoons sugar
8 tablespoons powdered sugar

Directions:

  1. Preheat the oven to 350° F. Line two baking sheets with parchment paper.
  2. Stir together the flour, baking powder, and salt in mixing a bowl. Set aside.
  3. Use a mixer to cream the butter, sugar, and lime zest in a separate bowl. Then add the eggs and mix until well combined. Pour in the lime juice and a few drops of green food coloring. Mix until combined. Slowly add the flour mixture to the bowl and mix to combine. Form 24 dough balls.
  4. Pour the sugar and powdered sugar into two separate bowls.
  5. Place a dough ball into the sugar and coat, shake off excess. Then place it in the powdered sugar and coat, shake off excess. Place on the baking sheets. Gently press down. Continue process with the remaining dough balls.
  6. Place the baking sheets into the oven and bake for 9-11 minutes, until the edges are firm and there are cracks.
  7. Remove from the oven and let cool for 5 minutes on the pan, then transfer cookies to a wire rack to cool completely.
