Pulled Portobello BBQ Sandwiches





Serves 2
Savory, Smoky, Spicy and Sweet.
Ingredients:
3 Portobello Mushrooms |
1 tablespoon unrefined coconut oil |
1/2 yellow onion, diced |
1/2 cup BBQ sauce |
2/3 teaspoon Liquid Smoke |
2 hamburger buns, warmed |
Directions:
- Place oven rack in the center. Preheat the oven to 425 degrees F. Line a sheet pan with parchment paper.
- Remove the stems of the portobello mushrooms, set aside. Use a spoon to gently scrape the insides of the portobello mushroom caps. Place the mushroom caps face down on the sheet pan and place in the oven and bake for 20-25 minutes.
- Pour the coconut oil in a saute pan and bring to low heat. Then add the diced onion and cook for 10 minutes, stirring occasionally.
- Trim the ends of the mushroom stems and use two forks to shred. Transfer to a bowl.
- Remove the portobello caps from the oven and let cool. Use two forks to shred the caps.
- Add all the shredded mushroom to the saute pan with the onions. Pour in the BBQ sauce and liquid smoke. Increase the heat to medium-low and cook for 5 minutes, stirring occasionally.
- Divide the BBQ pulled mushroom and onion amongst the buns. Enjoy!
