Cottage Cheese Lasagna Roll Ups

Ingredients:
8 uncooked lasagna noodles
1 egg
2 tablespoons pesto
2 cups 2% cottage cheese, drained
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley
1 teaspoon kosher salt
Ground black pepper, to taste
2 cups marinara sauce
1/2 cup shredded mozzarella cheese
Directions:
Preheat oven to 350° F.
Bring a large pot of water to a boil. Cook noodles according to package directions.
Combine the egg, pesto, cottage cheese, Parmesan, parsley, kosher salt and black pepper in a large mixing bowl. Stir until combined.
Ladle half of the marinara sauce along the bottom of a large oval baking dish.
Place a piece of wax paper on the counter and lay out lasagna noodles. Spoon 1/3 cup of the cottage cheese mixture on each noodle. Carefully roll up the noodles and place seam side down in the baking dish.
Ladle the remaining marinara sauce over the noodles and sprinkle on the mozzarella cheese.
Cover with aluminum foil and place in the oven. Bake for 40 minutes.
Remove from the oven. Divide the lasagna roll ups amongst serving plate. Enjoy!
