Baked Salmon with Avocado Mash

Serves 4

Wildly delicious, healthy and filling.

Ingredients:

4 salmon fillets
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
Ground black pepper, to taste
Salt, to taste
1 tablespoon extra-virgin olive oil
2 avocados
2 tablespoons juice
Chopped dill, for garnish
1/2 red onion, chopped

Directions:

  1. Preheat the oven to 375° F.
  2. Arrange the salmon fillets in a baking dish. Sprinkle paprika, garlic powder, cayenne pepper, black pepper and salt. Then drizzle with olive oil.
  3. Place the baking dish into the oven and bake for 12-15 minutes, until thoroughly cooked.
  4. Mash the avocados in a mixing bowl. Add the lime juice and chopped dill, stir together.
  5. Remove the salmon from the oven. Top each salmon fillet with the avocado mix. Then sprinkle the chopped red onion over top. Enjoy!
