Macaroni and Cheese Meatloaf Casserole

Two comfort food favorites finally come together.

Ingredients:

1 cup BBQ sauce, your preference
1 cup ketchup
2 lb lean ground beef
30 buttery round crackers
1 packet onion soup mix, 2 oz.
2 eggs
3 cups macaroni noodles
2 cups milk
1 can condensed cheddar cheese soup, 10.5 oz
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
2 cups shredded mozzarella
2 cups shredded cheddar

Directions:

  1. Preheat the oven to 350° F. Grease a large baking dish with cooking spray.
  2. Stir together the ketchup and barbecue sauce in a mixing bowl. Set aside.
  3. Place the ground beef into a large mixing bowl. Crush the buttery crackers in a resealable bag. Pour the cracker crumbs over the ground beef and add the Lipton onion soup mix and eggs. Pour a 1/2 cup of the ketchup mixture on the ground beef. Mix until fully combined. Press the meatloaf mixture evenly into the baking dish. Spread the remaining ketchup mixture over top.
  4. Place into the oven and bake for 30 minutes.
  5. Cook the macaroni according to the directions. Drain the water. Return pasta to the pot.
  6. Whisk together the milk and cheddar cheese soup in a mixing bowl until smooth. Season with garlic powder, onion powder salt, and pepper. Stir until well mixed. Then add the cooked macaroni noodles and stir until coated. Stir in 1 cup of mozzarella and 1 cup of cheddar.
  7. After the meatloaf has baked for 30 minutes, remove it from the oven. Pour the macaroni mixture over top and spread out evenly. Sprinkle the remaining 2 cups of shredded cheese on top of the macaroni. Return the dish to the oven and bake for an additional 20 minutes.
  8. Remove from the oven and let sit for 5 minutes serving. Enjoy!
