Cranberry Orange Baked Oatmeal

Serves 9
Sweet, tart, crunchy and wholesome.
Ingredients:
2 eggs |
1 1/4 cups milk |
1/4 cup pure maple syrup |
1/4 cup orange juice |
3 tablespoons avocado oil |
1/2 teaspoon vanilla extract |
2 1/4 cups rolled oats |
1 tablespoon orange zest |
1 teaspoon ground cinnamon |
1 teaspoon baking powder |
1/8 teaspoon fine sea salt |
1 cup fresh cranberries |
Directions:
- Preheat oven to 375° F. Lightly grease a large baking dish with baking spray.
- Whisk together the eggs, milk, maple syrup, orange juice, avocado oil, and vanilla extract in a large bowl.
- Stir in the rolled oats, orange zest, cinnamon, baking powder, and salt. Then fold in cranberries.
- Transfer the batter to the baking dish. Place in the oven and bake for 35-40 minutes.
- Remove from the oven and let cool for 20 minutes. Cut into squares and enjoy!
