Chicken Bruschetta Casserole

Serves 4

Flavorful, versatile, and perfect for leftovers.

Ingredients:

4 everything bagels
1/2 cup 18% cream
1/2 cup garlic and herb cream cheese
2 chicken breasts, cooked, shredded
4 Roma tomatoes, diced, seeded
1/2 red onion, diced
2 tablespoons basil pesto
1 teaspoon grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated mozzarella cheese

Directions:

  1. Preheat oven to 400° F. Grease a 9x13 baking dish with baking spray.
  2. Cut the bagels into small pieces. Pour them into the baking dish and spread out evenly.
  3. Place the 18% cream and garlic and herb cream cheese in a saucepan. Bring to medium-low and whisk until fully smooth.
  4. Add chicken to the saucepan and stir to coat. Remove the pan from the heat.
  5. Stir together the diced tomatoes, red onion, basil pesto, parmesan, salt and pepper in a mixing bowl.
  6. Pour the chicken into the baking dish and spread the cream cheese mixture over the chicken. Sprinkle the grated mozzarella over top.
  7. Transfer the baking dish to the oven. Bake for 30 minutes.
  8. Remove from the oven and let to cool for 5 minutes before serving. Enjoy!
