BBQ Chickpea Rice Bowl





Serves 3
Perfect for quick meal prep.
Ingredients:
2 cans chickpeas, rinsed and drained, 15 oz each |
2 tablespoons tomato paste |
1/2 cup vegetable broth |
1/4 cup soy sauce |
1/4 cup maple syrup |
2 tablespoons balsamic vinegar |
2 teaspoons liquid smoke |
1/2 teaspoon garlic powder |
1/2 teaspoon onion powder |
Cooked rice, for serving |
Directions:
- Pour the chickpeas, tomato paste, vegetable broth, soy sauce, maple syrup, balsamic vinegar, liquid smoke, garlic powder, and onion powder in a pot. Stir together and bring to medium-high heat. Simmer and stir for 10-15 minutes.
- Layer an even amount of cooked rice into the bottom of each bowl. Spoon the BBQ chickpea mixture on top of the rice. Enjoy!
