BBQ Chickpea Rice Bowl

Serves 3

Perfect for quick meal prep.

Ingredients:

2 cans chickpeas, rinsed and drained, 15 oz each
2 tablespoons tomato paste
1/2 cup vegetable broth
1/4 cup soy sauce
1/4 cup maple syrup
2 tablespoons balsamic vinegar
2 teaspoons liquid smoke
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Cooked rice, for serving

Directions:

  1. Pour the chickpeas, tomato paste, vegetable broth, soy sauce, maple syrup, balsamic vinegar, liquid smoke, garlic powder, and onion powder in a pot. Stir together and bring to medium-high heat. Simmer and stir for 10-15 minutes.
  2. Layer an even amount of cooked rice into the bottom of each bowl. Spoon the BBQ chickpea mixture on top of the rice. Enjoy!
