Cilantro Lime Cauliflower Rice and Chicken

Ingredients:
For the Cauliflower Rice
3 cups cauliflower rice
1/2 purple onion, chopped
Salt, to taste
For the Cilantro Lime Chicken:
1/2 lb chicken breast, cut into small cubes
1/2 tablespoon honey
2 tablespoons lime juice
1 tablespoon coconut aminos
1/4 teaspoon salt
1/2 teaspoon garlic powder
1 tablespoon fresh cilantro, chopped
For the Mango Salsa:
1/3 cup mangos
1/4 red onion
1 radish
1 clove garlic
1/3 cup cucumbers
1/2 avocado
1 tablespoon chopped cilantro
1 tablespoon olive oil
1/2 tablespoon honey
2 tablespoons vinegar
Directions:
Drizzle a small amount of olive oil into a large skillet. Bring to medium heat.
Once hot, add the chopped onion to the skillet. Cook for 2-3 minutes, then add in the cauliflower rice and cook for 6-7 minutes, until cooked through.
Stir together the honey, lime juice, coconut aminos, salt, garlic powder and cilantro in a mixing bowl. Add the chicken to the bowl and toss to coat.
Transfer the cauliflower rice to a bowl. Drizzle a little more olive oil into the same skillet. Add the chicken and cook for 7-8 minutes, stirring occasionally. Remove from the skillet.
Combine the mango, red onion, radish, garlic, cucumber, avocado, and cilantro in a large bowl. In a small bowl, stir together the olive oil, honey, and vinegar. Drizzle the olive oil mixture over the mango mixture.
Add half the cauliflower rice to each bowl. Add the chicken, and then top with the mango salsa. Enjoy!
