Baked Pears with Gorgonzola, Cranberries and Walnuts

Ingredients:
4 pears
2 tablespoons olive oil
1 teaspoon fresh thyme
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup gorgonzola cheese
1/3 cup dried cranberries
1/3 cup chopped walnuts
2 tablespoons honey
Directions:
Preheat oven to 375° F.
Cut the pears in half lengthwise.
Scoop out a 1/2 tablespoon sized well in the middle of each pear.
Arrange the pear halves in a large baking dish, cut side up. Drizzle them with olive oil. Sprinkle thyme over the pears, then sprinkle with salt and black pepper.
Place in the oven to bake for 20 minutes.
Stir together the gorgonzola, cranberries, and walnuts in a small bowl.
Remove the pears from the oven and spoon the gorgonzola mixture into the pear wells.
Place the pears back in the oven to bake for another 10 minutes, until the cheese is melted.
Remove the pears from the oven. Drizzle honey over top and enjoy!
