Classic Chicken Gyro with Tzatziki Sauce

Serves 4
A delectable Greek staple.
Ingredients:
1 lb boneless skinless chicken breasts |
Olive oil, for drizzling |
2 cloves garlic, minced |
1 tablespoon paprika |
1 teaspoon dried oregano |
4 pitas |
1 tomato, chopped |
1/2 red onion, chopped |
Crumbled Feta, for topping |
For Tzatziki Sauce |
2 tablespoons olive oil |
1 clove garlic, minced |
8 oz plain Greek yogurt |
1 teaspoon red wine vinegar |
1 1/2 tablespoons fresh dill |
2 tablespoons cucumber, grated |
Directions:
- Preheat oven to 375° F.
- Place the chicken in a small baking dish. Drizzle olive oil over top and coat well. Sprinkle minced garlic, paprika and oregano over the chicken and coat well.
- Place the baking dish in the oven to cook for about 30 minutes.
- Add a few drops of olive oil to a skillet, swirl around and bring to medium heat. Place a pita into the skillet to cook for 2 minutes, then flip and cook for an additional 2 minutes. Set cooked pita aside. Repeat with wit remaining pitas.
- To make the Tzatziki sauce, combine the olive oil, garlic, Greek yogurt, red wine vinegar, dill and cucumber in a mixing bowl. Stir together until well combined. Set aside.
- Remove the chicken from the oven and slice into strips.
- Place equal amounts of chopped tomato, chopped red onion, chicken and Tzatziki sauce in the middle of each pita. Fold pitas in half top with crumbled feta and enjoy!
