Cheesy Taco Potato Casserole

Serves 8
Comfort food at its absolute best.
Ingredients:
1 lb ground beef |
4 golden potatoes, sliced thin |
1 tablespoon canola oil |
1 yellow onion, diced |
1 packet taco seasoning, 1 oz. |
1 cup corn kernels |
1 jar salsa, 12 oz. |
Salt, to taste |
Ground black pepper, to taste |
2 cups grated mozzarella cheese |
Directions:
- Preheat oven to 400° F.
- Fill a pot with water and bring to a boil. Add sliced potatoes and cook for about 10 minutes, until softened. Drain water and set aside.
- Pour canola oil into a frying pan and bring to medium heat. Add yellow onion and stir until beginning to brown. Add taco seasoning and corn kernels to the pan. Stir together and reduce heat to low. Let simmer for about 15 minutes, occasionally stirring. Pour salsa over top and stir together. Remove from heat and set aside.
- Pour potatoes into the bottom of a casserole dish. Spread out evenly. Season with salt and pepper. Pour half of the mozzarella cheese over potatoes. Top with the salsa mix from the frying pan. Then add the remaining mozzarella over top.
- Cover the top of the casserole dish with aluminum foil and place in the oven. Bake for 35 minutes. Remove the aluminum foil and bake for an additional 15-20 minutes, until the cheese is browned.
- Remove from the oven, cut into 8 squares and enjoy!
