Glazed Apple Fritters

Simple, quick and irresistibly yummy.

Ingredients:

2 apples, peeled, cored and cut into small cubes
2 tablespoons brown sugar
1/3 cup sugar
2 tablespoons unsalted butter, melted
2 cups flour
1 teaspoon vanilla extract
1 tablespoon baking powder
1 cup milk
1 teaspoon salt
2 eggs
1 teaspoon cinnamon
Vegetable oil, for frying
For Glaze:
2 tablespoons apple cider
1/4 teaspoon vanilla extract
2 cups powdered sugar

Directions:

  1. Combine apples and 1/2 teaspoon cinnamon in a mixing bowl. Toss until apples are coated. Set aside.
  2. In a separate bowl, combine brown sugar, sugar, flour, baking powder and remaining cinnamon. Mix until well combined.
  3. In a separate bowl, crack eggs and whisk for 15 seconds. Add vanilla extract and milk. Whisk together until combined.
  4. Pour melted butter into egg mix. Whisk together until combined.
  5. Add wet ingredients into dry ingredients and mix together. Add apples and fold into batter.
  6. Fill a saucepan or Dutch oven with about 2-inches of oil. Bring to medium-low heat.
  7. As oil is heating, whisk together apple cider, vanilla extract and powdered sugar in a small bowl. Set aside.
  8. Separate batter into 16 pieces. Spoon batter into hot oil. Fry for about 60 seconds, until golden brown. Repeat with remaining batter.
  9. Place apple fritters on paper towel lined plated to cool.
  10. When ready to serve, drizzle glaze over top and enjoy while warm
