Sauteed Brussel Sprouts with Pancetta

Ingredients:
1 lb Brussels sprouts, (cleaned and quartered)
1/2 lb pancetta, (diced in 1 mm cubes)
1 clove of garlic, (finely diced)
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Directions:
Place pancetta in a large pan over medium heat and cook until fat starts to render. Place Brussels sprouts and olive oil in pan and toss. Cook for 3 to 5 minutes. Add garlic and cook until Brussels sprouts are tender. At the end, finish with vinegar and cook for 1 minute. Season to taste with salt and pepper.
