Pork Chops Glazed with Balsamic-Plum Sauce

Balsamic vinegar and plum preserves add great flavor to pork. See for yourself!

Ingredients:

1 teaspoon butter
4 4-ounce boneless center-cut loin pork chops (1/2-inch-thick)
3/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
Cooking spray
2 tablespoons chopped shallots
1 teaspoon bottled minced garlic
2 tablespoons balsamic vinegar
1/4 cup port wine
1/3 cup plum preserves

Directions:

  1. Set a large nonstick skillet over medium-high heat and then melt butter.
  2. Evenly sprinkle pork chops with ½ teaspoon salt and pepper. Place pork chops into skillet; cook 3 ½ minutes per side. Transfer pork chops to a plate.
  3. Coat skillet with cooking spray. Add shallots and garlic to skillet; saute 30 seconds.
  4. Add vinegar and port wine to skillet; cook and stir for 30 seconds.
  5. Add in plum preserves and remaining ¼ teaspoon salt; cook and stir for 30 seconds or until smooth.
  6. Place pork chops back into skillet and cook for 30 seconds or until desired degree of doneness is reached.
