Baked Pineapple Glazed Salmon

Serves 4
Brightly flavored and superbly tender.
Ingredients:
1/4 cup unsweetened pineapple juice |
2 tablespoons soy sauce |
4 6 oz. each salmon fillets |
1/3 cup brown sugar, packed |
Directions:
- Preheat oven to 350 degrees F. In a small bowl, whisk together pineapple juice, soy sauce and brown sugar.
- Set salmon fillets, skin side down, on a large foil-lined baking dish that has been greased. Brush pineapple sauce over salmon fillets. Bake, uncovered, for about 25 minutes or until fish flakes easily with a fork.
- While fillets bake, baste often with pan juices.
